C fue el que presentó diferencias signicativas con A
y B con un valor de 4,14 %. Los resultados obtenidos
son muy cercanos a los de (7) en las formulaciones
de granola y frutos secos como dátiles, higos y pasas
con valores promedios de 3.38 a 4,04 %. Por su parte,
(22) determinaron contenidos de proteína cercanos,
con valores entre 4,60 % y 4,80 %, cantidades que se
atribuye a sus materias primas a base de arroz y frutas
Sunnah secas. (23) determinaron valores de 6,83 % a
7,66 % estos valores fueron superiores a los obtenidos
en esta investigación esto debido a su formulación con
pseudocereales. En cambio, los resultados de cuatro
barras de granola obtenidos por (7) evidenciaron
valores que van desde 9,13 a 22,10 % de proteína,
superiores a los obtenidos en la presente investigación.
(24) en su investigación menciona que la barra de
cereal a base de Myciaria dubia, soya y chocolate
reportó un valor de 15,81 % de proteína. La adición de
los tubérculos resultó insignicante en el contenido de
proteína en la granola debido a su bajo porcentaje en
proteínas. Las barras/granolas de cereales suelen tener
un bajo contenido de proteína (10).
Contenido de Fibra cruda
Los resultados de bra cruda en la presente
investigación oscilan entre 2,42 % a 2,84 % existiendo
diferencias signicativas entre los tratamientos B y C
frente al tratamiento A como se muestra en la tabla 2. (24)
menciona que las barras de cereales que se encuentran
en el mercado más cercano o concurrente contienen
comúnmente ingredientes a base de avena en hojuelas,
arroz inado, pasas y saborizantes con bajos contenidos
de bra como se muestra en la investigación realizada
por (25) al determinar el contenido de bra de 2,9 %
en granolas comerciales, con valores muy cercanos
a los encontrados en la presente investigación. (7)
desarrollaron granolas con arroz insuado y frutos
secos y determinaron contenido de bra de 1,81 % y
1,94 % para los tratamientos con menor contenido de
aglutinante y miel estos valores cercanos al contenido
encontrado en las granolas en estudio. (8) en su
investigación encontraron un contenido de bra cruda
de 6,25 % en la elaboración de una granola prototipo
con hojuela de avena, maní triturado, kwicha, quinua
expandida, partícula de coco, ajonjolí. Los resultados
del contenido de bra reportados por (7) en sus
tratamientos con incrementos en aglutinante y miel
en este estudio variaron desde 4,24 % hasta 13,42%.
Esto se asemejó más al hallazgo de (26) en barras de
cereales elaboradas con almendra de barú y pulpa,
que tuvieron una composición promedio de bra del
18,13%. Hay que considerar que T. tuberosum contiene
69,7 a 79,50 % de carbohidratos (12); (27), valores
inferiores en relación con la O. tuberosa que tiene 87,23
% de carbohidratos (28).
Actividad antioxidante de la granola casera con la
adición t. tuberosum y o. tuberosa deshidratada.
Mediante el método ABTS se determinó la capacidad
antioxidante de la granola con adición de mashua y
oca, los resultados se detallan en la tabla 3.
El análisis estadístico reveló diferencias signicativas en
la capacidad antioxidante entre los tratamientos B y C en
comparación con el grupo control A, que registró 33,66
µm Trolox/g. Se observó un aumento en la capacidad
antioxidante en las muestras enriquecidas con T.
tuberosum y O. tuberosa, alcanzando valores de 41,22
µm Trolox/g y 43,75 µm Trolox/g, respectivamente. Este
fenómeno se atribuye a la presencia y concentración
de antioxidantes naturales en los tubérculos, como
compuestos fenólicos, carotenoides, antocianinas
y ácido ascórbico, los cuales son reconocidos por
su capacidad de secuestrar radicales peroxílicos.
La sinergia entre estos compuestos bioactivos en la
granola enriquecida contribuye signicativamente a su
potencial antioxidante (29).
Investigaciones previas han documentado la capacidad
antioxidante y el contenido de compuestos bioactivos
en T. tuberosum y O. tuberosa. (29) analizó 84 cultivares
de T. tuberosum, reportando un rango de capacidad
antioxidante por ABTS de 20,6 a 128,2 µmol TE/g. Por otro
lado, (30) estudiaron O. tuberosa fresca, encontrando
valores de capacidad antioxidante por ABTS entre 722 y
1732 µmol TE/g. Adicionalmente, (11) identicaron que
la capacidad antioxidante de O. tuberosa amarilla es de
39,29 µm Trolox/g, mientras que T. tuberosum presenta
una variabilidad de 16,2 a 92 µm Trolox/g debido a
la diversidad genética. En estudios especícos, se
descubrió que el extracto de T. tuberosum morada tiene
una capacidad antioxidante de 100,29 µm Trolox/100
mL y un extracto encapsulante de 47,18 µm Trolox/g,
siendo estos valores comparables a los hallados en
este estudio, donde una bebida basada en T. tuberosum
morada demostró una actividad antioxidante de 15,96
µm Trolox/g después de un tratamiento térmico a 77 °C
por 13 minutos. Estos resultados subrayan el valioso
aporte de los tubérculos andinos en la mejora de la
capacidad antioxidante de la granola, ofreciendo una
